Street food enters your kitchen, and in a new corn-rich avatar! Papadis or little puris are topped with sweet corn and crunchy onions, and spiked with tangy ajwain-flavored tomato chutney.


Papadi 30
Sev 2 Cup (32 tbs) (nylon sev)
Pomegranate 1/3 Cup (5.33 tbs) (anar)
For the tomato chutney
Tomato pulp 2 Cup (32 tbs) (refer tip)
Oil 2 Tablespoon
Carom seeds 1/2 Teaspoon (ajwain)
Asafoetida 1 Pinch (hing)
Garlic paste 1 Teaspoon (lehsun)
Chili powder 1 Teaspoon
Sugar 1 Teaspoon
Salt To Taste
For topping
Boiled sweet corn kernals 1 Cup (16 tbs) (makai ke dane)
Finely chopped onions 1/2 Cup (8 tbs)
Finely chopped tomatoes 1/4 Cup (4 tbs)
Finely chopped green chilies 1 1/2 Teaspoon
Lemon juice 1 1/2 Teaspoon
Chaat masala 1 1/2 Teaspoon
For the garnish
Finely chopped coriander 5 Tablespoon (dhania)




1. Combine together all the topping ingredients in a bowl.


2. In a non-stick pan, add oil, and when hot, add carom seeds. As soon as the seeds start crackling, add asafetida and garlic paste and sauté for half a minute, before adding tomato pulp.

3. Mix properly and cook for 4 - 5 minutes, while stirring intermittently. Then add chilli powder, sugar, and salt, and cook for a minute. Turn off heat.


4. On a serving plate, arrange six papadis. Top each papadi with 2 teaspoons of corn topping, followed by 1.5 teaspoon of tomato chutney, half teaspoon of pomegranate, and 1.5 teaspoon of sev.

5. Repeat the above steps to make 4 more plates of corn sev puri.


6. Serve immediately after garnishing with coriander.


To make 2 cups of tomato pulp, take 8 medium sized tomatoes and put them in boiling water for 2 - 3 minutes. Remove from flame, drain them, peel them and deseed. Then blend in a mixer until smooth.
