Spinach dumplings simmered in a yoghurt curry.

Ingredients

For the koftas
Blanched and chopped spinach leaves 3/4 Cup (12 tbs)
Bengal gram flour 1/4 Cup (4 tbs) (besan)
Salt To Taste
Cumin seeds 1/2 Teaspoon
Chili powder 1/2 Teaspoon
Soda bi carb 1 Pinch
Oil 1/2 Liter (For deep frying)
For the kadhi
Yogurt 1 Cup (16 tbs) , whisked (curd)
Bengal gram flour 2 Cup (32 tbs) (besan)
Cumin seeds 1 Teaspoon (jeera)
Asafoetida 1 Pinch (hing)
Curry leaves 6 (kadi patta)
Finely chopped garlic 1 Teaspoon (lehsun)
Thinly sliced onions 1/2 Cup (8 tbs)
Ginger green chilli paste
Oil 1 Tablespoon
Turmeric powder 1/4 Teaspoon (haldi)
Water 1 Cup (16 tbs)

Directions

GETTING READY

FOR THE SPINACH KOFTAS

1. In a bowl, mix together spinach, besan, salt, chili powder, cumin seeds, and soda bi-carb. Divide this mixture into eight equal parts and shape into round balls.

2. Add oil to the kadai, and when hot deep fry the koftas, 4-5 koftas at a time, until they are golden brown in color. Drain on paper towel and keep aside.

FOR THE KADHI

3. In a bowl, whisk together yogurt, besan, and half cup of water until there are no lumps. Add another half cup of water and whisk properly.

4. Add oil in the kadai and when hot, add cumin seeds. As soon as the seeds start crackling, add asafetida and curry leaves, and fry again for a few minutes. Now add, garlic and onions, and sauté for 2 - 3 minutes.

5. Add yogurt-besan mixture, salt, ginger - green chilli paste and turmeric powder and mix properly. Cook for 3 - 4 minutes, while stirring continuously. Turn off heat.

MAKING

6. Now add already prepared spinach koftas to the hot kadhi, and simmer for around 3 - 4 minutes.

SERVING

7. Serve the kadhi hot.
