Aloo chaat- its a delight to watch the baby potato turn into something so exciting! Tiny potatoes, marinated in Indian spices and sautéed in oil, are served topped with delicious chaat toppings, moong and sev. Not an integral part of all chaat counters, but has a fan-following of its own.


For potatoes
Baby potatoes 1 1/4 Cup (20 tbs) , boiled , peeled and halved
Oil 3 Tablespoon
Chili powder 1 Teaspoon
Coriander cumin powder 2 Tablespoon (dhania
Turmeric powder 1/4 Teaspoon (haldi)
Dried mango powder 2 Teaspoon (amchur)
Bengal gram flour 2 Teaspoon (besan)
Salt To Taste
Finely chopped coriander leaves 2 Tablespoon (dhania)
Other ingredients
Fresh yogurt 1/2 Cup (8 tbs) , whisked
Garlic chutney 2 Teaspoon
Green chutney 4 Teaspoon
Sweet chutney 2 Tablespoon
Cumin seed powder 2 Pinch (jeera)
Chili powder 2 Pinch
Boiled sprouts 4 Tablespoon (moong sprouts (optional))
Chana dal 4 Teaspoon (masala chana dal)
Sev 4 Tablespoon
For the garnish




1. In a bowl, mix together two tablespoons of oil, chili powder, coriander-cumin seeds powder, dry mango powder, turmeric powder, besan, salt, and coriander. Now mix in potato halves to this mixture allow to marinade for 5-7 minutes.

2. In a non stick pan, add oil, followed by adding marinated potatoes Cook for 3-4 minutes, while stirring intermittently. Keep aside.


3. In a plate, place half the marinated potatoes and top with ¼ cup of whisked yogurt, 1 teaspoon of garlic chutney, 2 teaspoon of green chutney, and 1 tablespoon of sweet chutney.

4. Now sprinkle a pinch of cumin seeds powder and chilli powder, 2 tablespoons of moong sprouts, 2 teaspoon of masala chana dal, and 2 tablespoon of sev.

5. Repeat the above steps to make another plate.


6. Serve the chaat immediately after garnishing with coriander.
