Aloo Gobhi Pulao by Tarla Dalal

Here we have tweaked the common aloo gobhi recipe, to enhance it into a complete meal. Bite- sized cauliflower florets and potatoes are combined with rice and cooked together in the pressure cooker.

Ingredients

Peeled potato chunks 3/4 Cup (12 tbs)
Cauliflower florets 1 Cup (16 tbs)
Long grained rice 1 1/2 Cup (24 tbs) , soaked and drained (basmati)
Clarified butter 2 Tablespoon (ghee)
Cloves 6 (laung / lavang)
Bay leaves 2
Turmeric powder 1/2 Teaspoon
Chili powder 1 Teaspoon
Salt To Taste
For garnish
Papad 2 Tablespoon (coarsely crushed)
Hot water 3 1/2 Cup (56 tbs)

Directions

GETTING READY

1. In a pressure cooker, add ghee (clarified butter), and when hot add cinnamon, cloves, and bay leaves. Saute for a few seconds before adding rice.

2. After sautéing for a minute or two add cauliflower, potatoes, turmeric powder, chili powder and salt and sauté for a minute.

3. Now add 3.5 cups of hot water and pressure cook for two whistles.

4. Open the lid of the cooker, after the steam escapes out completely.

SERVING

5. Serve the pulao hot after garnishing with papad.
