Paneer and Corn Burger by Tarla Dalal

Crispy lettuce, freshly sliced veggies and a cheesy corn pattywhat more can you ask for in a burger! paneer and corn go very well together in the patty, and the coriander and chilies give them a well-deserved pep-up. Serve with French fries, for a complete meal.


For the patty
Crumbled paneer 1/2 Cup (8 tbs)
Boiled and coarsely crushed sweet corn kernels 1/2 Cup (8 tbs)
Chopped coriander 2 Tablespoon
Finely chopped green chilies 1 1/2 Tablespoon
Bread crumbs 2 Tablespoon
Corn flour 1 Tablespoon
Salt To Taste
Other ingredients for patty
Plain flour 1/2 Cup (8 tbs) , dissolved in ¾ cup water
Bread crumb 1/2 Cup (8 tbs) (as needed)
Oil 1 Cup (16 tbs) (For deep frying)
Other ingredients
Burger bun 2
Butter 1 Tablespoon (For greasing)
Mayonnaise 2 Tablespoon
Iceberg lettuce 2 , soaked in cold water for 15 minutes
Tomato slice 4
Onion slice 4
Salt and ground black pepper To Taste



For Patty

1. In a bowl, combine paneer, corn, coriander, green chili, bread crumb, corn flour, and salt. Mix well and roll the mixture into 2 equal sized patties.

2. Dip each patty in the maida-water mixture and roll in the bread crumbs until evenly coated from all the sides.

3. In a skillet, heat oil and deep-fry each patty until golden brown from both the sides. Drain on paper towel and set aside.

For Burger:

4. Cut each burger bun horizontally into half and apply butter on both the sides. Toast them lightly on a griddle.

5. On a clean, dry worktop, place the lower half of the buns and apply ½ tablespoon of mayonnaise on each bun halves.

6. Place an iceburg lettuce, a patty, 2 tomato slices and 2 onion slices and sprinkle a little salt and pepper over the bottom half.

7. Cover with an upper half of the bun and press it lightly.


8. Serve immediately with French fries.
