Chickpea and Paneer Salad

Fresh, crisp lettuce, boiled kabuli channa, paneer cubes, tomatoes, olives, and spring onions make a vibrant-looking salad. The olive oil infused with garlic and chili flakes is tossed in with the salad for a lovely treat!


Chickpea 1 Cup (16 tbs) , soaked and boiled
Cottage cheese 3/4 Cup (12 tbs) , cubed
Tomato 1/2 Cup (8 tbs) , cubed
Black olives 2 Tablespoon , thinly sliced
Parsley 2 Tablespoon , chopped finely
Spring onion greens 1/4 Cup (4 tbs) , chopped finely (Optional)
Salt To Taste
Freshly ground black pepper To Taste
Lettuce 1 Cup (16 tbs) , torn into pieces
For dressing
Olive oil/Refined oil 1 1/2 Tablespoon
Lemon juice 1 Tablespoon
Powdered sugar 2 Teaspoon
Red chili flakes 1 Tablespoon
Garlic 2 Teaspoon , finely chopped



1. In a small bowl, pour in olive oil and lemon juice, add sugar, salt, pepper, chili flakes and olive oil.

2. In a mixing bowl, add chick peas, cottage cheese, tomatoes, olives, parsley, spring onion, pour in the dressing and mix well. Season with salt and pepper. Add lettuce and toss to mix. Refrigerate for at least an hour.


3. Serve chilled.
