Quick Soya Uttapam by Tarla Dalal

Semolina always lends itself to quick dishes as it cooks easily. Here, it combines with protein-rich soya milk and a bouquet of other handy ingredients to make instant soya uttapam. You can add more value to this dish by tossing in a few more grated veggies if you find time.


Soya milk 1 1/2 Cup (24 tbs) (plain unflavored soya milk)
Semolina 1 Cup (16 tbs) (rava)
Finely chopped onion 1/2 Cup (8 tbs)
Finely chopped tomatoes 1/2 Cup (8 tbs)
Finely chopped coriander 2 Tablespoon (dhania)
Finely chopped green chilies 2 Teaspoon
Salt To Taste
Oil 8 Teaspoon (for greasing and cooking)



1. In a bowl, mix together semolina and soya milk. Keep the mixture aside for ten minutes.

2. Stir in onions, tomatoes, green chillies, coriander, and salt.


3. Take a non stick pan/tava and grease it slightly with oil. When hot, pour a small spoonful of batter on the pan and spread it to make a 3 inch diameter circle. 3-4 uttapams can be made at a single time. Flip over the uttapams when cooked on one side, and cook the other side using little amount of oil.

4. Repeat the same procedure with remaining batter to prepare more mini uttapams.


5. Serve the uttapams hot with coconut chutney.
