Sweet Boondi by Tarla Dalal

Very easy and quick way to make these delicious boondis. Serve them hot to your guests and they will surely relish it!


For sugar syrup
Sugar 1 Cup (16 tbs)
Saffron strands 2 Pinch , dissolved in 2 tsp water
Water 1 Cup (16 tbs)
Other ingredients
Bengal gram flour 1 Cup (16 tbs) (besan)
Water 1/2 Cup (8 tbs)
Clarified butter 1/2 Kilogram (ghee (For deep frying))
For garnish
Cardamom powder 1/2 Teaspoon (elaichi)
Pistachio slivers 1 Teaspoon
Almond slivers 1 Teaspoon (badam)




1. In a broad non stick pan, combine together water and sugar. Mix properly and cook on high heat for 5 - 7 minutes, until the syrup is of one thread consistency. Stir in saffron-water mix, and keep aside.


2. In a bowl, combine together gram flour and water and mix properly until there are no lumps. Keep it aside.

3. Add clarified butter to kadai, and when hot pour 3 - 4 tablespoons of the batter at a time over a large sized round perforated spoon (boondi jhara), so as to allow the boondi drops to fall into hot ghee. Deep-fry the boondis over medium heat for a couple of minutes and take them out of the kadai using slotted spoon. Put the boondis in warm sugar syrup and mix properly.

4. Repeat the above step to prepare more batches of boondi.


5. Serve the boondi hot garnished with cardamom powder, almond slivers, and pistachio slivers.


While dropping in batter into hot ghee, make sure to hold the perforated spoon 3 - 4 inches above the kadai.
