Moong Dal ka Shorba by Tarla Dalal

Dals are a staple diet of people in the Punjab. Nearly every kind of dal is grown and cooked here. In most households the meal is incomplete without at least one dish made with pulses. The yellow moong dal or split yellow gram is very popular in punjabi cooking. This dal requires minimal soaking time and is easy to cook. Here is a lovely shorba made with the much loved yellow moong dal. The use of green chilies and chilli powder makes it a spicy treat though you can adjust the spiciness according to your preference. You can add any chopped boiled vegetables to this shorba and make it a healthy treat for the whole family.

Ingredients

Split yellow gram 3/4 Cup (12 tbs)
Finely chopped onions 1/2 Cup (8 tbs)
Chopped tomatoes 1/2 Cup (8 tbs)
Green chili 1 Medium , slit
Chili powder 1 Teaspoon
Chopped ginger 1/2 Teaspoon (adrak)
Turmeric powder 1/2 Teaspoon (haldi)
Garam masala 1 Teaspoon
Salt To Taste
Clarified butter 1 Tablespoon (ghee)
Finely chopped garlic 1 Tablespoon (lehsun)
Water 4 Cup (64 tbs)
For garnish
Coriander sprig 1

Directions

GETTING READY

1. Soak the dal for half an hour after cleaning and washing it properly. Drain away the water.

2. Now combine the dal with tomatoes, onions, green chili, ginger, chili powder, turmeric powder, garam masala, salt, and two cups of water in a pressure cooker and cook for three whistles. Open the cooker lid when the steam escapes out.

MAKING

3. In a deep wok/kadai, add clarified butter (ghee), and when hot, add garlic and sauté for a few seconds.

4. Now add cooked moong-dal mixture, along with one cup of water, and mix properly using a whisk. Cook on a medium flame for 1 to 2 minutes.

5. Cook for a minute or so and add another cup of water. Mix properly and cook for 3 - 4 minutes, while stirring intermittently using a whisk. Get rid of the green chili.

SERVING

6. Serve the shorba hot after garnishing with coriander sprig.
