Fruity Phirni (Infant) by Tarla Dalal

Creamy and yummy! another version of rice porridge that's perked up with fruits. The rice flour makes the phirnee creamy and smooth in texture and is great for babies who do not like fruits or milk. This dish is a good source of energy, protein, vitamin a and calcium.

Milk 1 Cup (16 tbs)
Rice flour 1 1/2 Teaspoon
Grated jaggery 1 Tablespoon
Mango puree 3 Tablespoon

1. In a broad non-stick pan, bring milk to a boil, add rice flour and whisk well until no lumps remain. Stir occasionally and simmer for 4-5 minutes or until the mixture thickens a little.

2. Add jaggery, mix well and cook for 30 seconds or until the jaggery dissolves completely. Remove the pan from heat and set aside to cool completely.

3. Add mango purée and mix well.

4. Serve immediately.

You can also serve it without the mango puree. Instead add a little bit of saffron and cardamom.
