Naan is the most well-known Indian bread and is fast gaining popularity the world over. The naan is leavened bread prepared in the traditional tandoor. However for those of us who do not have tandoors in our kitchens, here is a great way of preparing the naan using a non-stick tava. Serve them hot with any sabzi or dal of your choice.

Plain flour 1 Cup (16 tbs) (maida (all purpose flour))
Dry yeast 1/2 Teaspoon
Sugar 1/2 Teaspoon
Yogurt 1 Tablespoon (fresh curd/dahi)
Clarified butter 1 Tablespoon , melted (ghee)
Salt To Taste
Black sesame seeds 5 Teaspoon (kala til)
Lukewarm water 1 Cup (16 tbs) (for yeast and dough)
Other ingredients
Plain flour 1/2 Cup (8 tbs) (for rolling)
Butter 2 Tablespoon , melted (for brushing)

1. In a bowl, combine together yeast, sugar, and 5 tablespoons of lukewarm water. Cover and keep aside for 5 - 7 minutes.

2. In a large bowl, combine together flour, yeast-sugar mixture, yogurt, melted ghee, and salt, and knead in the form of soft dough using lukewarm water. Keep aside the dough for around half an hour after being covered with a wet muslin cloth or lid, so as to allow it to rise.

3. Now divide the dough into ten equal parts.

4. On a rolling board, flatten a dough ball slightly with a rolling pin, and sprinkle half teaspoon of black sesame seeds. Roll out the dough into oblong shape using little amount of plain flour.

5. On hot non-stick griddle (tava), place the naan with sesame seeds side facing downwards. Cook on one side till it puffs slightly and then flip over and cook the other side till slightly puffed up.

6. Now roast the naan on open flame on both the sides until golden brown.

7. Repeat the above steps to prepare nine more naans.

8. Brush butter on each naan and serve hot.
