Get set to be transported to the land of the nawabs with this amazing nawabi curry. Although Ive converted it into a low-cal version, which is quite unlike the original, Ive managed to retain the authentic taste by using an array of carefully selected spices. Rather than fried vegetables, I have used boiled vegetables to cut down the calories to only 40 calories per serving. Savor this great recipe that is rich in taste even while being a treasure trough of vital nutrients like vitamin C and fiber, with hot parathas.

For the paste
Onion 1 Cup (16 tbs) (thinly sliced)
Coriander seeds 1 Tablespoon (dhaniya seeds)
Cumin seeds 1 Tablespoon (jeera)
Poppy seeds 1/2 Tablespoon
Aniseeds 2 Teaspoon (vilayati saunf)
Ginger 1 Inch (adrak (25 mm))
Green chilies 2
Cardamom cream 2
Cloves 2 (lavang/laung)
Cinnamon 1 Inch (dalchini (25 mm))
Water 2 Tablespoon
Other ingredients
Tomatoes 2 Cup (32 tbs) , chopped
Oil 2 Teaspoon
Mixed vegetable 1 1/2 Cup (24 tbs) , chopped and boiled (cauliflower , french beans , carrots , etc)
Salt To Taste
Sugar 1/2 Teaspoon
Water 1 Cup (16 tbs)

1. Blend together all the paste ingredients in the mixer to form a smooth puree.

2. In a broad pan combine tomatoes with water, mix properly, and cook for 4 to 5 minutes on medium heat or until the tomatoes are soft. Keep aside to cool. When cool, pour them in a mixer and blend to form a smooth puree. Keep aside.

3. In a non stick kadai, heat oil, and add the already prepared onion paste and sauté on low heat for 2 - 3 minutes.

4. Now add the tomato purée, mix properly and cook on medium heat for a couple of minutes, while stirring occasionally.

5. Add mixed vegetables, salt, and sugar. Mix properly and cook for another couple of minutes.

6. Serve the curry hot.
