Coconut Stew by Tarla Dalal

This is a delicately flavored stew with coconut and spices! Served best with Appam.


Coconut milk 1 Cup (16 tbs)
Oil 1 Tablespoon
Onion 1/2 Cup (8 tbs)
Cardamom 2
Cloves 2 (lavang)
Cinnamon 1 (stick)
Green chili 1
Salt To Taste
Cornflour 1 Teaspoon , dissolved in 2 tbsp water
Mixed vegetables 1 1/2 Cup (24 tbs) , boiled, cut diagonally (carrots and french beans)



1. In a broad non-stick pan, heat oil, and then add onions. Sauté on medium heat for a minute or two, and then add cardamom, cloves, and cinnamon. Mix properly, and sauté for a few seconds.

2. Now add coconut milk, green chili, and salt, and cook for a minute.

3. Add cornflour-water mix, followed by adding mixed vegetables. Mix properly and cook for a few minutes on medium level of heat, while stirring continuously.


4. Serve it hot, along with appam.
