Moong Dal Dahi Vadas (Non-Fried) by Tarla Dalal

Amidst drum rolls and lots of pomp, we present a non-fried version of none other than one of the most popular chaats. . . Dahi vada. Be careful not to soak the wadas beyond 2-3 minutes, to prevent them from breaking. This snack will surely stir up your appetite when served with green chutney and sweet and sour chutney. This is a heavy snack so, i suggest you do not indulge in more than one serving.

Ingredients

For the vadas
Green moong daal 1 Cup (16 tbs) (split green gram)
Green chili 2 , roughly chopped
Asafoetida 1 Pinch
Salt To Taste
Fruit salt 1/2 Teaspoon
Oil 1 1/4 Teaspoon (For greasing and cooking)
For curd mixture
Low fat curd 2 Cup (32 tbs) (made from 99.7% fat
Oil 1 Teaspoon
Mustard seeds 1/2 Teaspoon
Other ingredients
Cumin seed powder 1 Teaspoon , divided
Chili powder 2 Teaspoon , divided

Directions

GETTING READY

1. Clean, wash and soak the moong dal in water for 3-4 hours.

MAKING

For Vadas:

2. Drain the dal, add green chili and blend into a smooth paste. Add little water, if needed.

3. Into a bowl, transfer the mixture, add asafoetida and salt. Mix well.

4. Sprinkle fruit salt and 1 tablespoon of water over the batter. When bubble starts to form, mix gently.

5. Grease a non-stick griddle with about ¼ teaspoon of oil.

6. Pour ladleful of batter on griddle. Make 3-4 vadas at a time. Cover with a lid and cook over low flame for 2-3 minutes.

7. Turn upside down, cover again and cook using ¼ teaspoon of oil for another 2-3 minutes. Repeat the process for remaining batter.

8. Soak the vadas in enough water for 2 minutes. Thereafter, squeeze out the water and set aside.

For Curd:

9. In a bowl, combine curd and salt. Whisk well.

10. In a small pan, heat oil, add mustard and allow them to splutter. Pour the tempering into whisked curd and mix well.

FINALIZING

11. On a serving platter, place two vadas and top it with little tempered curd. Sprinkle ¼ tsp of cumin seeds powder and ½ tsp of chili powder. Repeat to make more servings.

SERVING

12. Serve immediately.
