Hariyali Rice with Coconut Sauce by Tarla Dalal

A colourful rice served with a mildly flavored coconut sauce.


For coconut sauce
Coconut milk 1 Cup (16 tbs)
Oil 1 Tablespoon
Cumin seeds 1/2 Teaspoon
Curry leaves 2
Slit green chilies 1
Salt To Taste
Lemon juice 1 Teaspoon
Sugar 1/2 Teaspoon
Corn flour 2 Teaspoon , dissolved in 2 tbsp cold water
For the rice
Cooked rice 1 1/2 Cup (24 tbs)
Oil 2 Tablespoon
Finely chopped onion 1/4 Cup (4 tbs)
Green chili paste 1 Teaspoon
Finely chopped spinach 1 1/4 Cup (20 tbs)



For Coconut Sauce:

1. In a non-stick pan, heat oil, add cumin and allow it to splutter.

2. Add curry leaves, green chili, coconut milk, salt, lemon juice, sugar, and corn flour-water mixture. Stir constantly and cook for 1-2 minutes. Set aside.

For Rice:

3. In a non-stick griddle, heat oil, and saute onion over medium flame for 1-2 minutes.

4. Add green chili paste, spinach, stir and cook for 1- 2 minutes.

5. Add rice and salt, stir and cook over medium flame for 1-2 minutes.


6. In a glass bowl, fill the rice and demold on a plate.


7. Serve hot with coconut sauce.
