Corn Pulao by Tarla Dalal

What would a meal be without a rice dish! this pulao is loaded with yummy sweet corn kernels, and is undoubtedly a favorite with young and old alike.


For the rice
Cooked rice 2 1/2 Cup (40 tbs)
Butter 1 Tablespoon
Salt To Taste
Milk 1/2 Cup (8 tbs)
For corn mixture
Sweet corn kernels 1 1/2 Cup (24 tbs) , boiled
Oil 1 Tablespoon
Cumin seeds 1/2 Teaspoon
Chopped green chili 1 Tablespoon
Finely chopped onion 1/2 Cup (8 tbs)
Other ingredient
Oil 1 Teaspoon (For greasing)
For garnish
Finely chopped coriander 1 Tablespoon



For Rice

1. In a broad non-stick pan, heat butter, add rice and saute over medium flame for 1-2 minutes.

2. Season with salt and pour milk. Stir occasionally and cook for 1-2 minutes. Set aside.

For Corn Mixture

3. In a broad non-stick pan, heat oil, add cumin and allow it to splutter.

4. Add green chili and onion. Mix well and saute over medium flame for 1-2 minutes.

5. Stir in sweet corn and season with salt. Cook for 1-2 minutes.


6. Grease a microwave safe bowl with oil and spread the corn mixture evenly at the bottom. Put rice on top, spread and press well.

7. Just before serving, microwave on high for 2-3 minutes and invert on a plate.


8. Serve hot garnished with coriander.
