Stuffed Potatoes with Paneer by Tarla Dalal

A crispy outer and a soft interior, makes stuffed potatoes with paneer a perfect starter! roasted potato cases are stuffed with a delectable mixture of cottage cheese spiced mildly with green chilies and interspersed with cashews and raisins. Sour cream makes a great accompaniment for this delightful snack.


For potato case
Boiled peeled potatoes 3 , cut into halves and scooped
Oil 1 Tablespoon (For greasing and cooking)
Salt To Taste
For stuffing
Mashed paneer 1 Cup (16 tbs) (cottage cheese)
Finely chopped coriander 1 Tablespoon
Finely chopped green chili 2 Teaspoon
Sugar 1 Pinch
Chopped cashewnuts 1 Tablespoon
Chopped raisins 1 Tablespoon
Milk 1 Teaspoon (Optional)
For garnish
Finely chopped coriander 2 Tablespoon



For Potato Case:

1. Heat a non-stick griddle, grease it with oil and place the potatoes on it.

2. Put little oil and sprinkle salt all over the potatoes. Cook the potatoes on high flame for 2-3 minutes or till they turn light brown.

3. Turn the potatoes around, sprinkle salt, brush with little more oil and cook for 2 to 3 minutes.

4. Turn the potatoes again and cook on low flame for 2-3 minutes or until nice and crispy.

For Stuffing

5. In a bowl, combine mashed paneer, coriander, green chili, salt, sugar, cashew, and raisins. Mix well. Add milk if the mixture is dry and mix well.

6. Divide the stuffing into 6 equal portions and keep aside.


7. Fill 1 portion of the stuffing into each potato case and press them well so the stuffing does not spill out.

8. Heat a non-stick griddle, place the stuffed potato cases on it with the stuffed side facing upwards and cook over medium flame for 1 minute. Turn them upside down and cook for a few seconds.


9. Transfer to a plate, garnish with coriander and serve immediately with sour cream.
