Rava dosa is a delectably crispy dosa that can be prepared instantly, without the need for any fermentation. A traditional tempering and quick mix-in of chopped onions, coriander and green chilies add excellent flavor to a batter made of ready flours. This dosa is indeed an irresistible option for breakfast, supper, snack or a sudden meal for a surprise guest.

Ingredients

Semolina 1/2 Cup (8 tbs) (rava/ sooji)
Plain flour 1 1/2 Tablespoon (maida)
Rice flour 1 1/2 Tablespoon
Salt To Taste
Oil 1 1/2 Tablespoon
Cumin seeds 1 Teaspoon
Asafoetida 1 Pinch
Curry leaves 4 (3
Finely chopped coriander 1 1/2 Tablespoon
Finely chopped green chili 2 Teaspoon
Finely chopped onion 1/4 Cup (4 tbs)
Oil 2 Tablespoon (For greasing and cooking)

Directions

MAKING

1. In a large bowl, combine semolina, plain flour, rice flour, and salt. Pour 1 cup of water and mix well till no lumps remain. Pour another cup of water, mix and set aside.

2. In a small pan, heat oil and add the cumin seeds. Allow the cumin to splutter.

3. Remove the pan from flame and add asafoetida and curry leaves. Mix well and add it to the prepared batter.

4. Add coriander, green chili and onion. Mix well.

5. Heat a non-stick griddle and grease it lightly with oil. Sprinkle little water on it.

6. Pour ½ cup batter in a circular manner. Pour a little oil in the holes of the dosa and cook until crisp. Repeat the process for remaining batter.

SERVING

7. Serve hot with coconut chutney.
