Stuffed Cauliflower Parathas by Tarla Dalal

Crisp and tasty parathas that none can refuse, the stuffed cauliflower paratha is wonderful way of preparing healthy cauliflower. Whole wheat flour and a liberal amount of cauliflower make this a nutritious dish, which is crispier than normal parathas due to the additional of rice flour. Aromatic herbs like coriander and mint along with green chilies give these parathas a naturally strong aroma that kindles one's appetite.


For dough
Rice flour 1 1/2 Cup (24 tbs) (1/2
Whole wheat flour 3/4 Cup (12 tbs)
Oil 1 1/2 Tablespoon
Salt To Taste
Milk 1/4 Cup (4 tbs) (as needed for kneading)
For cauliflower stuffing
Oil 1 Tablespoon
Chopped cauliflower 1 Cup (16 tbs)
Turmeric powder 1/4 Teaspoon
Finely chopped coriander 2 Tablespoon
Finely chopped mint 2 Tablespoon
Finely chopped green chilies 1 Teaspoon
Freshly ground black pepper To Taste
For rolling and cooking
Whole wheat flour 1 Tablespoon (For dusting as needed)
Oil 1 Tablespoon (For greasing and cooking)



For Dough

1. In a bowl, combine whole wheat flour, rice flour, oil and salt. Mix well.

2. Gradually pour milk and knead into stiff dough. Cover and keep aside for 15 minutes.


For Cauliflower Stuffing

3. In a non-stick pan, heat oil, add chopped cauliflower, salt and turmeric powder. Sprinkle 2 tablespoons of water, stir occasionally and cook over medium flame for 2-3 minutes.

4. Add the coriander, mint leaves, green chilies and pepper powder. Mix well and cook for 1 to 2 minutes, stirring occasionally. Divide the stuffing into 6 equal portions and keep aside.

For Paratha:

5. Divide the dough into 6 equal portions and roll 1 portion into 6-inch diameter thin circle using a little whole wheat flour for rolling.

6. Place the roti on a greased hot non-stick griddle and place 1 portion of the stuffing on one half of the roti.

7. Fold the other half of the roti over the stuffing to make a semi-circle and press it lightly so that the stuffing doesn't spill out. Cook using oil till it turns golden brown from both the sides.


8. Serve hot with fresh curd.
