Poha Khichu, a simple Gujarati snack made of flaked rice cooked with spices. You can even make the khichu ahead of time and steam it for 4 to 5 minutes just before serving. To make it spicier, you can add finely chopped green chilies.

Ingredients

Coarsely ground beaten rice 1 Cup (16 tbs)
Coarsely crushed cumin seeds 2 Teaspoon
Soda bi carb 1 Pinch
Chili powder 1/2 Teaspoon
Salt To Taste
For sauce
Oil 3 Tablespoon
Finely chopped garlic 1 Tablespoon
Chili powder 1 Teaspoon
Salt 1 Pinch
For greasing
Oil 1/2 Teaspoon (For greasing)

Directions

GETTING READY

1. Grease a plastic chocolate mold tray with oil and set aside.

MAKING

2. In a deep pan, heat 2½ cups of water, add the soda bi-carb, cumin seeds, chili powder and salt. Mix well and boil over high flame for 2-3 minutes.

3. Add the ground beaten rice, mix well and cook on medium flame for 1 -2 minutes, stirring continuously.

4. Reduce the heat, cover the pan with lid, stir occasionally and cook for 10 minutes.

5. Divide the mixture into 12 equal portions and shape each portion into a round ball. Gently press each portion into the depression of the greased mold.

6. Invert the tray and tap it lightly to unmold the khichu. Keep aside.

For Sauce:

7. In a small pan, heat oil, add garlic and saute on low flame until it releases flavor.

8. Remove the pan from flame, add chili powder and salt. Mix well.

FINALIZING

9. Around a plate, place the khichu. In a small bowl, transfer the sauce and place in the centre of the plate.

SERVING

10. Serve immediately and enjoy!
