Masala pav, whoever invented bread will be awe-struck to see it being put to such good use! Quick and easy, masala pav is made by stuffing spicy tomato-onion gravy inside butter-laden pavs. Sometimes, the pav is just roasted on the tava with butter, loads of coriander and pav bhaji masala. Ask for cheese along with it for a richer feel.

Ingredients

For masala
Butter 4 Tablespoon
Cumin seeds 1 Tablespoon
Red chili garlic paste 4 Tablespoon
Finely chopped onion 1 1/4 Cup (20 tbs)
Finely chopped capsicum 1 Cup (16 tbs)
Water 1 1/4 Cup (20 tbs) , divided
Finely chopped tomatoes 4 Cup (64 tbs)
Salt To Taste
Chili powder 1/2 Teaspoon
Pav bhaji masala 1 Tablespoon
Finely chopped coriander 1/4 Cup (4 tbs)
Lemon juice 1 Tablespoon
Other ingredients
Butter 8 Teaspoon
Pav bread 8 (laddi pav)

Directions

MAKING

For Masala

1. In a deep skillet, heat butter and add the cumin seeds. Let the cumin splutter.

2. Add the red chili-garlic paste and saute over medium flame for 30 seconds.

3. Stir in onion, capsicum and ¼ cup of water. Stir occasionally and cook for 5-7 minutes or until the onions turn translucent.

4. Add tomato, salt, chili powder, pav bhaji masala and 1 cup of water. Mix well and cook for 10-12 minutes, stirring occasionally.

5. Slightly mash the mixture, add the coriander and simmer for another minute.

6. Add the lemon juice and mix well. Divide the mixture into 8 portions and keep aside.

FINALIZING

7. In a non-stick griddle, heat 1 teaspoon of butter, add a portion of the prepared masala and saute over medium flame for a few seconds.

8. Slit 1 pav vertically, open and place it on the masala. Spread the masala evenly over the pav till it gets evenly coated from all the sides. Repeat with the remaining ingredients to make more masala pav.

SERVING

9. Serve immediately with lemon wedges.

TIPS

For red chili garlic paste, soak dry Kashmiri red chili in water for 30 minutes, drain and then grind it with garlic cloves.
