Green Peas Dhokla by Tarla Dalal

Green peas dhokla, easy and delicious dhoklas that are made nutritious by the addition of green peas, which are full of fibre and also impart a nice green colour. Besan is a versatile ingredient that is used to make most farsaans. Citric acid crystals are added to impart the required tanginess to this dhokla you can also use lemon juice.

Ingredients

Green peas puree 1 Cup (16 tbs)
Besan 1 Cup (16 tbs) (Bengal gram flour)
Salt To Taste
Powdered sugar 2 Tablespoon
Ginger green chili paste 1 Teaspoon
Citric acid 1/2 Teaspoon , dissolved in 1 tbsp water
Oil 1 Teaspoon (For greasing)
Fruit salt 1 1/2 Teaspoon
For tempering
Oil 1 1/2 Tablespoon
Mustard seeds 1 Teaspoon
Asafoetida 1/4 Teaspoon
Finely chopped green chili 1 Teaspoon
For garnish
Finely chopped coriander 2 Tablespoon
Freshly grated coconut 1 Tablespoon

Directions

GETTING READY

1. Grease a 7-inch diameter plate (thali) with little oil.

MAKING

2. In a bowl, combine besan, green peas puree, salt, powdered sugar, ginger- green chili paste, citric acid-water mixture, and ½ cup of water. Mix until smooth and set aside.

3. Just before steaming, add the fruit salt and add 2 tablespoon of water into the batter. When the bubbles form, mix gently.

4. Pour the batter immediately into a greased plate and shake clockwise to spread evenly.

5. Place the plate in steamer and steam for 12 minutes or until done.

For Tempering:

6. In a small pan, heat oil and add the mustard seeds. Allow the mustard to splutter.

7. Turn off the flame, add asafoetida and green chilies. Mix well.

8. Add 1 tablespoon of water and pour the tempering over the dhoklas. Set aside to cool slightly and cut into square pieces.

SERVING

9. Garnish with coriander and coconut and serve immediately with green chutney.

TIPS

1. Always use your hands while mixing the batter to break the lumps.

2. To make 1 cup green peas puree, blend 1½ cups fresh green peas in a mixer till smooth. Keep refrigerated till use.
