Garlicky Makai Roti by Tarla Dalal

You could consider garlicky makai roti as a desi alternative to the typical garlic bread you get at pizzerias. Made with maize flour dotted with flavor enhancers like coriander, chillies and garlic, you will love this interesting and toothsome roti. It is quite filling, and fit to be a quick meal. In fact, you don't even need a side-dish you can simply serve with a cup of curds and a tangy pickle.

Ingredients

Maize flour 1 Cup (16 tbs) (makai ka atta)
Oil 1 Tablespoon
Finely chopped coriander 3 Tablespoon
Finely chopped green chili 1 Teaspoon
Finely chopped garlic 2 Teaspoon
Salt To Taste
Rice flour 1 Tablespoon (For dusting as needed)
Oil 1 Tablespoon (For greasing as needed)

Directions

MAKING

1. In a deep bowl, combine maize flour, oil, coriander, green chili, garlic, and salt. Pour enough warm water and knead into soft dough.

2. Divide the dough into 6 equal portions and roll each portion into a 4-inch diameter circle using little rice flour for rolling.

3. Heat a non-stick griddle (tava) and grease it lightly with oil. Cook each roti, using a little oil, till it turns golden brown from both sides.

SERVING

4. Serve hot with fresh curds and pickle.

TIPS

Instead of garlic you may use ajwain.
