Spinach Cheese Cigars with Honey Chilli Sauce by Tarla Dalal

Crunchy Samosa patti rolls, filled with a spicy cheese and spinach mixture. Serve these immediately to enjoy the taste of the melted mozzarella cheese. Ready-made Samosa pattis are available at most provision stores.

Ingredients

Samosa patti 9
Plain flour 2 Tablespoon , dissolved in 3 tbsp water
Oil 2 Cup (32 tbs) (For deep frying)
For stuffing
Finely chopped spinach 1 1/2 Cup (24 tbs) , blanched
Grated mozzarella cheese/Grated paneer 1/2 Cup (8 tbs)
Salt and ground black pepper To Taste
Finely chopped green chili 2 Teaspoon
For honey chili sauce
Honey 1/4 Cup (4 tbs)
Lemon juice 1 Tablespoon
Dry red chili flakes 1 1/2 Tablespoon
Water 2 Tablespoon
Sugar 1 Teaspoon (Optional)

Directions

GETTING READY

For Filling:

1. In a bowl, mix blanched spinach, cheese, salt, pepper, and green chili. Set aside.

For Honey Chili Sauce:

2. In a small bowl, combine honey, lemon juice, red chili flakes, water, and sugar. Mix well.

MAKING

3. Cut each samosa patti into 3 to get 3-inch x 2½-inch rectangular pieces. You will have 24 pieces in all.

4. Place a piece of the patti on a flat dry surface and place a portion of the filling at one pointed edge.

5. Roll each patti towards the opposite pointed edge and stick the edges with a little flour paste to form a cylindrical shape. Seal the edge using a little of the flour paste. Repeat with the remaining pieces.

6. In a broad non-stick pan or kadhai, heat oil and deep fry the rolls, a few at a time, till they turn golden brown from all the sides. Drain on paper towel.

SERVING

7. Serve immediately with honey chili sauce.

TIPS

Squeeze out all the water from the blanched and chopped spinach to prevent the cigars from becoming soggy.
