Delicious Indian pancake, relished particularly during Holi
Melted clarified butter | 1 Cup (16 tbs) ((ghee, for deep frying)) | |
For batter | ||
Plain flour | 250 Gram | |
Caster sugar | 2 Teaspoon | |
Cardamom powder | 1/4 Teaspoon | |
Water | 25 Milliliter | |
For sugar syrup | ||
Sugar | 400 Gram | |
Water | 600 Milliliter | |
For garnishing | ||
Fresh cream | 2 Tablespoon |
MAKING
For Batter:
1. In a bowl, combine plain flour and caster sugar. Mix well.
2. Gradually pour water and mix well to form a batter. The consistency should be that of a pancake batter. Add more water if required to get the desired consistency.
3. Add ground cardamom and mix well.
For Syrup:
4. In a pan add water and sugar. Stir and cook for 8-10 minutes or till the sugar melts and forms syrup. Set aside and let it cool.
FINALIZING
5. In another pan add ghee or clarified butter. When the ghee is hot add ½ a ladle of the batter to the pan and fry until golden brown.
6. Take them out from the ghee and add them to the sugar syrup. Let them soak into the syrup for 2-3 minutes.
SERVING
7. Garnish with fresh cream and serve hot.
