Gajar Ka Halwa is a creamy and crunchy dessert made with carrots, cardamom, sugar and milk and enriched with nuts like pistachios, almonds, cashews, raisins and dates.

Grated carrots | 4 Cup (64 tbs) | |
Sugar | 1 Cup (16 tbs) ((to taste)) | |

Slivered blanched almonds | 1 Tablespoon | |
Pistachio | 1 Tablespoon |
GETTING READY
1. In 2 separate pans pour 2 cups of milk each and bring it to boil. To one pan add lemon juice and mix well till the milk curdles. Strain it in a muslin cloth to separate the creamy part. Set aside.
MAKING
2. In a pan heat the ghee. Add the cardamom, raisins, cashews, almonds and pistachios. Fry them for a few seconds or till they turn light brown. Add the dates and continue to sauté.
3. Put in the grated carrots and cook for around 10 minutes. Pour the boiled milk, stir well to combine and cook for another 10 minutes or till the carrots are cooked.
4. In a blender put 3 tablespoons of the cooked carrot mixture and blend to a paste. Add it to the halwa and mix well. Repeat this with the strained creamy milk solid obtained from the curdled milk. Add it to the halwa and mix well till combined.
5. Taste to check the sweetness of the carrots and add the sugar according to taste. Mix well and continue to cook till it is thick and creamy. Turn off the heat.
SERVING
6. In a serving plate, serve the halwa hot garnished with more cardamom powder, almonds and pistachios if desired.
