Chopped ginger | 1 Teaspoon | |

Tomatoes | 1 1/2 , chopped finely | |
Capsicum | 1/2 , sliced ((green bell pepper)) | |
Cayenne pepper powder | 1/2 Teaspoon | |
Garam masala powder | 1/4 Teaspoon | |
Turmeric powder | 1/4 Teaspoon | |
Whole bay leaf | 1 | |
Cloves | 5 | |
Cinnamon stick | 1/2 Inch | |
Water | 70 Milliliter | |

GETTING READY
1. For the base of the sauce, in a blender add the tomato, chopped onion, garlic, and ginger. Blend into a smooth paste. Pour the mixture in a bowl and set aside.
MAKING
2. In a frying pan, heat 4 teaspoons ghee (clarified butter).When ghee becomes hot add the paneer( Indian cottage cheese).
3. Fry and take them out on a piece of kitchen towel to soak the extra ghee.
4. In the same pan pour some more ghee (2 teaspoon), add bay leaf , cloves, dry red chillies and cinnamon stick.
5. When the spices splutter add onion and tomato mix. Stir well on a low flame. Cook till it changes colour and the oil leaves the gravy . If it gets a bit dry add 20 ml of water (optional). keep checking the sauce from time to time.
6. Add turmeric powder, cayenne pepper powder, and garam masala powder. Mix it well. Pour water (20 ml). Don’t dilute the gravy too much.
7. Stir in capsicum and season with salt to taste. Cook for 3-4 minutes on a low flame.
8. Add the fried pieces of paneer (Indian cottage cheese) and water (50 ml). Cook for another 3-4 minutes.
SERVING
9. Serve hot with roti, paratha or naan.
