Potato Stuffed Samosa

Indias popular snack which you can find in every restaurant or on a roadside stall. A comfort food at its best, crisp exterior with a spicy potato stuffing.

Ingredients

For the dough
All purpose flour 1 Cup (16 tbs)
Salt To Taste
Baking powder 1/4 Teaspoon
Oil 2 Tablespoon
Water 1/4 Cup (4 tbs) (as required to make soft dough)
For the stuffing
Boiled and mashed potatoes 1 Cup (16 tbs)
Red chili powder 1/4 Teaspoon
Coriander powder 1/2 Teaspoon
Kasuri methi 1 Pinch
Coriander leaves 1/4 Cup (4 tbs) , finely chopped
Other ingredients
Oil 1 Cup (16 tbs) (For deep frying)

Directions

GETTING READY

1. For the dough – in a large bowl, sift flour and add salt, baking powder and oil, mix well using your hands.

2. Knead a soft dough with water. Cover and keep aside for half an hour.

MAKING

3. For the stuffing – in a medium bowl, add in all the ingredients for the stuffing and mix well.

4. Divide the dough into 12 equal balls. Roll each ball with the rolling pin into a slightly thin puri, Take a knife and divide the rolled puri into two by cutting through the center.

5. Now take one half of the puri, and make a fold in the shape of a triangle. Now place this cone between your thumb and index finger and place a ball of the stuffing inside. Wet your finger and run it along the edges of the dough with water and seal to enclose the stuffing.

6. Press the ends firmly so that the filling does not come out during the deep frying process. Prepare samosas with the rest of the dough in the same manner.

7. In a skillet, heat the oil and deep fry the samosas on medium heat until cooked.

SERVING

8. Serve Samosas with your choice of condiment.
