This is an amazing Chicken 65 recipe reminiscent of my times in India. Served at every Restaurant and Bar, this is a perfect snack to accompany good friends and drinks.
To marinate chicken | ||
Chicken thigh meat | 2 Pound , cut into cubes | |
Eggs | 1 , beaten | |
Cornstarch/Cornflour | 2 Tablespoon | |
Salt | To Taste | |
For the sauce | ||
Oil | 2 Tablespoon , divided | |
Red onion | 1 Medium , chopped finely | |
Garlic | 4 Clove (20 gm) , chopped finely | |
Green chillies | 2 Small , chopped finely | |
Curry leaves | 1/2 Cup (8 tbs) | |
Ginger paste | 1 Tablespoon | |
Garlic paste | 1 Tablespoon | |
Cumin powder | 1 Teaspoon | |
Turmeric powder | 1 Teaspoon | |
Chili powder | 1 Teaspoon | |
Red chili paste | 2 Tablespoon | |
Red food color | 1/4 Teaspoon |
GETTING READY
1. In a bowl mix chicken pieces with egg, cornstarch and salt to taste. Mix well and let it sit for around 1 hour.
MAKING
2. In a pan heat around 1 ½ tablespoon of oil. Put the marinated chicken in it and sauté them for a few minutes or till they turn brown. Transfer into a plate or bowl and set aside.
3. In the same pan add ½ tablespoon more oil. Put the onions, garlic and green chilies and curry leaves. Saute them for a few minutes or till the onions turn golden brown.
4. Put the ginger paste, garlic paste, cumin, turmeric, chili powder, and red chili paste. Continue to saute them till all the raw flavor is gone and oil begins to separate. Add the red color and stir well to color evenly.
5. Return the browned chicken pieces into the spice mixture and continue to stir well till all the pieces are coated. Close with a lid and cook for a few minutes or till the chicken is done. Remove the lid and continue to stir and cook till it dry to desired consistency.
SERVING
6. In a serving plate, serve the chicken 65 hot with dip of choice or as it is.
