A new take on an old classic! Bringing the flavors of spices, curry leaves, garlic and ginger etc to ground chicken. A versatile recipe that you can use to make fillings and canapes as well!

Oil | 1 Tablespoon , divided | |
Red onion | 1/2 Medium , chopped | |
Fresh curry leaves | 1/2 Cup (8 tbs) | |
Garlic | 2 Clove (10 gm) , crushed | |
Green chillies | 2 Small , chopped | |
Cumin powder | 1 Teaspoon | |
Chilli powder | 1 Teaspoon | |
Red chilli paste | 2 Teaspoon | |
Ginger paste | 1 Tablespoon | |
Garlic paste | 1 Tablespoon | |
Red food color | 1/4 Teaspoon (powder) |
GETTING READY
1. In a bowl ground chicken, cornstarch, egg and salt to taste. Mix well till combined. Set aside.
MAKING
2. In a pan heat ½ tablespoon of oil on medium heat. Add onions, curry leaves, green chili and garlic. Saute them well till onions turn translucent and soft.
3. Season with cumin, chilli powder, chilli paste, ginger and garlic paste. Saute for a few minutes and cook till the raw smell disappears. Season with salt to taste. Put the food color and stir well till it is evenly colored. Remove from heat.
4. In another pan, heat ½ tablespoon of oil. Put the chicken mixture and sauté for a few minutes. Pour the sautéed onion and spice mixture into it and continue to stir well till all the chicken is evenly colored. Continue to cook for another 10 minutes or till the chicken is fully cooked and done.
SERVING
5. In a serving plate, serve the ground chicken 65 hot.
