Mooli Paratha - Radish Stuffed Indian Flat Bread

Mooli paratha is a radish stuffed Indian stuffed bread. Parathas can be either stuffed or just plain. Stuffed parathas dont need any accompaniment to go along with them whereas plain parathas are usually served with any gravy curry or dal.


For the dough
Whole wheat flour 3/4 Cup (12 tbs)
Oil 1 Tablespoon
Water 1/4 Cup (4 tbs) (as required)
Salt 1 Pinch
For the stuffing
Radish 2 Cup (32 tbs) , shredded
Oil 2 Teaspoon
Grated garlic 1/2 Teaspoon
Carom seeds 1/2 Teaspoon
Red chili powder 1 Teaspoon
Salt 1/2 Teaspoon
Dry coconut powder 2 Tablespoon
For dusting
Whole wheat flour 1 Tablespoon (For dusting)
For frying
Ghee 1/4 Cup (4 tbs)



1. In a bowl combine whole wheat flour, salt and oil, mix it well and gradually add water and knead to make a soft dough.

2. Grease the dough with few drops of oil and cover the bowl, allow the dough to rest for 30 minutes.

3. Place the radish in a bowl and sprinkle salt, massage the radish and then allow it to rest for 15 minutes.

4. After 15 minutes squeeze out all the water from the radish, set aside.

5. In pan pour oil, add carom seeds and grated garlic and stir, add radish and stir to break all the lumps. Cook for 5 minutes or until the raw flavor goes away.

6. Add red chili powder and coconut, salt to taste and stir everything, turn off the heat. Cool the mixture completely.

7. After 30 minutes knead the dough once and then make round dumplings, dust the dumplings in flour and using a rolling pin, roll into 3 inch diameter circle.

8. Continue till all the dumplings are rolled, set aside.

9. Divide the stuffing into equal parts, place the stuffing into the rolled dumplings and seal the open ends. Follow the same steps for the remaining dough, once done allow it to rest for 5-10 minutes.

10. Dust the dumplings into the dry flour and start rolling it, gently roll into a circular shape.

11. Preheat the tava and place the roti and cook for 30-40 seconds on each side, grease it with some ghee on both sides. Remove and serve.


12. Serve with raita, plain yogurt or any curry of your choice.
