Suran Ki Sabzi

Suran is a healthy veggie, extremely rich in minerals like copper, zinc and magnesium. This one is a traditional style preparation of a low effort delicacy.


Elephant yam 300 Gram , cut into pieces
Water 4 Cup (64 tbs) , divided (as needed)
Mustard oil 2 Cup (32 tbs) (For deep frying)
Onion 2
Garlic cloves 10
Salt To Taste
Coriander powder 2 Teaspoon
Turmeric powder 1 Teaspoon
Red chili powder 1 Teaspoon
Garam masala 1 Teaspoon

Bay leaf 1 , broken into pieces
Black cardamom 1 , crushed
Cloves 5
Fenugreek seeds 1/4 Teaspoon

2. In a pressure cooker, pour in water( 2 cups), add the yams and pressure cook for 2 whistles. Allow to cool until manageable, peel off.

3. In a wok, heat oil, gently slide in the yams and fry until crisp.
