A popular Indian dessert prepared with grated carrot, milk, sugar, and nuts.
Carrot | 1 Kilogram , grated | |
Milk | 1 Liter | |
Cardamom | 5 , crushed | |
Water | 1 Cup (16 tbs) | |
Clarified butter | 2 Teaspoon (ghee) | |
Raisins | 2 Teaspoon | |
Sugar | 1/4 Cup (4 tbs) | |
Khoya | 200 Gram (reduced milk) | |
For garnishing | ||
Chopped almonds | 2 Teaspoon | |
Chopped pistachio | 2 Teaspoon |
GETTING READY
1. In a deep pan add water and let it boil.
2. In the meanwhile, soak the raisins in 2½ tbsp of hot water till they become plump.
MAKING
3. Add the grated carrots to the boiling water and stir occasionally for 5 minutes or till the water from the carrots becomes substantially less.
4. Add milk and cook on a low flame for an hour.
5. Once the carrots and the milk have reduced add sugar and stir well till the sugar is dissolved.
6. Add ghee or clarified butter. Mix well.
7. Stir in khoya and then add the soaked raisins, and crushed cardamom. Stir well.
SERVING
8. Garnish with chopped almonds and pistachios and serve hot.
