Chicken do Pyaza is a very popular Indian main dish. Chicken and onion are cooked in aromatic spices to make it really flavorful and it goes best with naan and roti.

Ginger paste | 1/2 Teaspoon | |
Garlic paste | 1/2 Teaspoon | |
Whole black peppercorns | 10 | |
Whole dry red chilies | 2 | |
Whole bay leaves | 2 | |
Green cardamom | 4 | |
Cloves | 3 | |
Green chilies | 2 , slitted | |
Tomato | 1 , chopped finely | |
Vegetable oil | 3 Tablespoon | |
Turmeric powder | 1/4 Teaspoon | |
Cayenne pepper powder | 1/2 Teaspoon | |
Cumin powder | 1/2 Teaspoon | |
Coriander powder | 1/2 Teaspoon | |
Water | 380 Milliliter | |
Salt | To Taste |
MAKING
1. In a pan, heat vegetable oil. Add baby shallots in hot oil and cook until translucent. Take them out and keep aside.
2. In the same pan add black peppercorns, dry red chilies, bay leaves, green cardamoms, and cloves. Let the spices splutter.
3. Add chopped onion, ginger paste, and garlic paste. Stir well.
4. Stir in cayenne pepper powder, turmeric powder, cumin powder, and coriander powder. Continue cooking the dry spices. Add 5 ml of water so that the spices don’t stick to the pan.
5. Add chopped tomato and water (1½ cup). Cook on a low flame until the sauce starts to thicken.
6. Add the chicken cubes to the pan and stir well.
7. Season with salt to taste, and then put cooked baby shallots and green chilies. Cover with a lid and cook for another 8-10 minutes.
SERVING
8. Serve hot with roti or naan.
