A popular dish prepared in the Eastern part of India including Bengal, Bihar, and Uttar Pradesh. Here potato is cooked in selected spices to give it a unique flavor. Tastes best when served with roti or puri.
Potatoes | 300 Gram , cut into small cubes | |
Onion | 1/2 , finely chopped | |
Vegetable oil | 2 Tablespoon | |
Whole dry red chilies | 2 , torn | |
Coriander seeds | 1 Teaspoon | |
Chopped garlic | 1 Teaspoon | |
Amchur powder/Anardana powder | 1 Teaspoon (dried mango powder or pomegranate powder) | |
Cumin coriander powder | 1 Teaspoon | |
Chopped green chili | 1 Teaspoon | |
Water | 1 Cup (16 tbs) | |
Salt | To Taste | |
For garnishing | ||
Cilantro leaves | 5 Gram (as needed) |
MAKING
1. In a pan pour vegetable oil; add dry red chili and coriander seeds. Let it splutter.
2. Put chopped onion and fry until golden brown.
3. Add potatoes, fry for 3-4 minutes and then add garlic and chopped green chili.
4. Stir in mixture of cumin-coriander powder and season with salt to taste.
5. Pour water, cover with lid and simmer until potatoes turn soft. Chokha does not have curry so cook until water evaporates.
6. Add amchur powder and mix well.
SERVING
7. Garnish with cilantro leaves and serve hot.
