These vadas are a vegetarian delight. A perfect snack on a rainy or cold day. A little bit tricky, but you are definitely going to enjoy this with your family and friends.

Sago 3/4 Cup (12 tbs)
Mashed potatoes 1 Cup (16 tbs)
Grated ginger 1 Teaspoon
Green chilies 1 Teaspoon , finely chopped
Lemon juice 1 Teaspoon
Chopped coriander leaves 2 Tablespoon
Salt To Taste
Oil 1 Cup (16 tbs) (For deep frying)

1. Wash the sago. Drain and keep aside for 2 hours.

2. Divide the sago into half and grind half of the sago in a food processor.

3. Mix the sago paste and whole sago along with all the other ingredients and knead lightly to form a soft dough.

4. Divide the mixture into 12 equal portions. Shape each portion into a round and flatten slightly.

5. In a skillet, heat the oil and place the vadas. Deep fry until golden brown. Take out it from the skillet and place over the kitchen towel to absorb excess oil.

6. Serve hot with green chutney or tamarind chutney.
