Upma is a traditional south Indian breakfast dish made from semolina. This is often served with chutney or pickle, but I enjoy this with some hot spicy sambar. Whats your favorite?

Semolina 1 Cup (16 tbs)
Oil 1 Tablespoon
Mustard seeds 1/2 Teaspoon
Cumin seeds 1/2 Teaspoon
Curry leaves 5
Green chilies 1 Teaspoon , finely chopped
Ginger 1 Teaspoon , finely chopped
Onions 1/4 Cup (4 tbs) , finely chopped
Tomatoes 1/4 Cup (4 tbs) , finely chopped
Green beans 1/4 Cup (4 tbs) , diced
Salt To Taste
Boiled water 2 Cup (32 tbs)
Fresh lemon juice 1 Tablespoon
Coriander leaves 2 Gram , finely chopped

1. In a skillet, add the semolina and dry roast for 5 minutes while stirring continuously. Take out the semolina in a plate and set aside.

2. Into the same skillet, heat the oil and once the oil is hot add in the mustard seeds, cumin seeds, green chilies, ginger and curry leaves. Let it pop.

3. Add in the onion, and carrots, let it sauté for a minute or two. Stir in the tomatoes and green beans and season with salt and sauté for a few minutes.

4. Pour in the boiled water, roasted semolina and lemon juice. Cook until the water is absorbed.

5. Garnish the Veggie Upma with some coriander leaves and serve.
