Just as the name implies, this idly is instant and requires no fermentation. Throw in your favorite veggies, flavor with herbs and spices, if you wish and there you have an excellent power packed breakfast to keep you going the entire day. And since you steam it in idly maker, you need check back only when it whistles. Perfect for a busy morning!

Curd/Natural yogurt | 8 Tablespoon | |

Baking soda | 1/2 Teaspoon | |
Hing | 1/4 Teaspoon (asafetida) | |
Ghee | 1/4 Teaspoon (for greasing) | |
For the vegetable mix | ||
Sunflower oil | 1 Teaspoon | |
Mustard seed | 1/4 Teaspoon | |
Grated carrot | 48 Gram (about 1 ½ small) | |
Chopped green chili | 3 Gram (about 3 small) | |
Chopped coriander leaves | 7 Gram (about a handful) |
GETTING READY
1. Heat a pan in low heat and add the instant oats. Dry roast for about 10 minutes and when cooled, powder in a blender and keep aside.
2. In the same pan, dry roast the suji until slightly browned. Keep aside (you may skip this step if you are already using roasted suji)
MAKING
3. Heat oil in the pan and splutter mustard seeds. To this add the grated carrots and green chilies; sauté until the raw smell of carrots is gone and it becomes tender.
4. Add the coriander leaves, mix in well and remove from heat.
Even the above 2 steps can be done beforehand; that is the previous night and to save time, you can start with point 5 the next morning.
5. Take a mixing bowl with the powdered oats and suji in it. Add the rest of the ingredients along with the vegetable mix.

6. Pour about 150-200 ml water to make it into a slightly smooth batter (just as you would have for normal idly.
Do not leave the mix for a long time so, because it tends to get thicker. So as soon as you make the batter be ready to cook it.

7. Now grease the idly maker trays with oil or ghee. Pour a small ladle full of batter in the moulds. This recipe can yield about 15 medium sized idlis.

8. Steam for about 10-15 minutes. Remove from heat, let it cook and unmould.
SERVING
9. Serve with your favorite chutney or like me, eat it plain (it reminds me of kozhukatta that we make back in Kerala)
