Three in One Paratha

Doesnt it feel just wonderful when you mix and match flavors and this paratha will let you do exactly that! Potato in any form is my all time favorite and I just happened to have some cauliflower too. And with a bunch of red spinach that I had to use up, there was nothing better I could think of making than this unique three in one paratha. Its perfect for lunch or dinner!


For the dough
Whole wheat flour 1 Cup (16 tbs) , more for dusting
Milk/Water 100 Milliliter (enough to make the dough)
Salt To Taste
For the stuffing
Cauliflower flowerets 100 Gram , boiled and mashed
Spinach 50 Gram , blanched and roughly mashed
Boiled potato 115 Gram , mashed
Onion 1/2 Medium , finely chopped
Green chili 2 Medium , finely chopped
Turmeric powder 1/4 Teaspoon
Garam masala 1/2 Teaspoon
Chopped coriander leaves 3 Tablespoon
For serving
Garlic butter 2 Tablespoon



1. In a mixing bowl, bring together all ingredients for the filling and mix well using hands ensuring there are no hard lumps. Please take care to ensure spinach is dried as much as you cab before mashing and mixing together with the rest of the ingredients.

2. In another bowl bring together all ingredients for dough and knead well to smooth consistency (like as you would for roti or pizza). Add milk little by little to ensure dough doesn’t become too sticky. Keep aside.


3. Heat the pan on low heat.

4. In the meanwhile, dust the rolling board. Make 1 ½ inch balls out of the dough and working one at a time, slightly flatten the ball with hands and roll into 3-3 ½ inch diameter circle using the rolling pin. Place a spoonful a filling in it.

5. Bring together the edges and twist to seal.

6. Slightly flatten the ball again by hand, dust it well and roll it out again to make a 6-7 inch paratha. The filling may peep out at times; use extra flour for dusting whenever the dough sticks to the surface.

7. Place the fully rolled out paratha on the pan. Cook until the side is browned and flip over to brown the other side as well. When done transfer to a hot box.


8. Serve hot with garlic butter and some spicy pickle by the side. Thick curd is a great way to enjoy this dish.
