Reduced Calorie Pork Vindaloo

Here comes an exotic pork vindaloo recipe, with an added advantage of reduced calories! Spicy and delicious pork curry with exotic flavor!

Ingredients

Lean pork 350 Gram (Cut into pieces)
Whole spices for marinade:
Dry red chilies 4 Medium
Cumin seeds 1 Teaspoon
Mustard seeds 1 Teaspoon
Curry leaves 1 Tablespoon
Cinnamon stick piece 1 Small
Black peppercorns 4 Small
Clove 2 Small
Other ingredients for marinade:
White vinegar 2 Tablespoon
Low calorie oil 2 Tablespoon
For the gravy:
Potato 1 Small , chopped
Onion 1 Large , chopped
Bay leaf 1 Medium
Garlic cloves 2 Medium , chopped
Ginger 1 Inch , chopped finely
Turmeric 1 Teaspoon
Water 1 Cup (16 tbs)
Low calorie vinaigrette dressing 1 Tablespoon
Salt To Taste
Garam masala 1/2 Teaspoon
For garnishing:
Green onion 1 Tablespoon , chopped finely
Cilantro 2 Tablespoon

Directions

GETTING READY

1. Heat a pan with oil. Add all the whole spices and fry them for a couple of minutes.

2. In a blender, blend the spices along with pure white vinegar, to get a fine paste.

3. Marinate the lean pork pieces with the prepared marinade and let it marinate for about an hour.

MAKING

4. Heat a pan with a couple tbsp oil. Add the marinated pork pieces and sear them for about 2 - 3 minutes.

5. Once done, remove the seared pieces from the pan and set them aside.

6. Heat up the same pan, add the bay leaf, ginger, garlic and onions. Saute until onions turn soft.

7. Add turmeric and stir until onions turn golden brown.

8. Then, add the seared pork pieces and potatoes (if using), stir well. Add water and vinegar, let the pork simmer for about 10 - 15 minutes in this gravy until tender.

9. Once the pork is cooked, finally add garam masala and garnish with chopped green onions and cilantro leaves, the pork vindaloo is now ready to be served.

SERVING

10. Serve warm with rice or any Indian style flatbread.
