Aloo Bachali Fry

It is a simple and easy to make potato stir fry, it has a healthy variation to it with the inclusion of Chinese spinach. The combination of these two vegetables work well and the asafoetida gives it a nice subtle taste.

Ingredients

Potato 3 Medium , boiled (cut the boiled potato into small pieces)
Chinese spinach 1 Cup (16 tbs) , chopped finely (bachali kura)
Green chili 1 , chop
Mustard seeds 1 Teaspoon
Cumin seeds 1 Teaspoon
Turmeric powder 1/4 Teaspoon
Chili powder 1/2 Teaspoon
Asafoetida 1 Pinch
Oil 1 Tablespoon
Salt To Taste

Directions

MAKING

1.Heat oil in a pan, add mustard seeds, cumin seeds, green chili and asafoetida.

2.When it splutters, add the Chinese spinach and stir fry for 2 minutes.

3.Add the boiled potatoes, salt, chili powder, turmeric powder and stir fry until properly cooked.

SERVING

4.Serve it hot with roti or phulka(Indian flatbread).
