Light Chicken Tikka Masala

Succulent pieces of boneless chicken breast in rich spicy tomato gravy. Great dish to serve on celebrations. Vegetarians can replace chicken with low fat cottage cheese.

Ingredients

Boneless skinless chicken breast 3 (cut into medium sized pieces)
For marinade
Low fat yogurt 1 Cup (16 tbs)
Lemon juice 1 Tablespoon
Cumin powder 2 Teaspoon
Cinnamon powder 1 Teaspoon
Cayenne pepper 2 Teaspoon
Black pepper powder 2 Teaspoon
Minced ginger 1 Tablespoon
Salt To Taste
For gravy
Low fat butter 1 Tablespoon
Minced garlic 1 Clove (5 gm)
Jalapeno pepper 1 , chopped finely
Paprika 2 Teaspoon
Tomatoes 8 Ounce , pureed
Light cream 1 Cup (16 tbs)
For garnish
Chopped cilantro 1/4 Cup (4 tbs)

Directions

GETTING READY

1.In a large bowl, combine yogurt, lemon juice, cumin, cinnamon, cayenne, black pepper, ginger, and salt. Stir in chicken, cover, and refrigerate for 1 hour.

2. Preheat grill on high heat.

MAKING

3. Lightly oil the grill. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.

4. Melt butter in a large heavy skillet over medium heat.

5. Saute garlic and jalapeno for 1 minute. Season with cumin, paprika, and salt.

6. Stir in tomato puree and cream. Simmer on low heat until sauce thickens, about 20 minutes.

7. Add grilled chicken, and simmer for 10 minutes.

SERVING

8. Transfer to a serving platter, and garnish with fresh cilantro. Tastes best with tandoori roti's or naan.
