This chicken paratha is very filling and delicious. The stuffing here is comparatively heavy as it has a mix of chicken and egg in it.

Onion 2 Medium , chopped finely
Tomato 1 Medium , chopped finely
Ginger cloves 1 , mince
Chicken boneless 1/4 Kilogram , mince
Egg 1
Green chili 1 , mince
Curry leaves 10 , mince
Coriander leaves 4 Teaspoon , chop
Cumin seeds 1/2 Teaspoon
Fennel seeds 1/2 Teaspoon

Chili powder 1/2 Teaspoon
Coriander powder 1 Teaspoon
Garam masala 1/4 Teaspoon
Oil 2 Tablespoon
Salt To Taste
For the dough
Maida 4 Cup (64 tbs)
Oil 3 Tablespoon (for kneading the dough)
Water 1 Cup (16 tbs)
Oil 1/2 Cup (8 tbs) (for roasting paratha)

1.Take maida in a wide bowl, add salt, oil and mix thoroughly by sprinkling water. Knead well until the dough becomes soft. Cover with a towel/cloth and let it rest for 1/2 hour atleast.

2.Heat oil in pan, add cumin seeds, fennel seeds and curry leaves. When it begins to splutter, add the chopped onions, green chili, ginger and garlic and fry till they turn golden brown.

3.Add the tomato along with minced chicken, salt, turmeric powder, chili powder, coriander powder and garam masala and fry until the water gets evaporated and the chicken is properly cooked.(approx 30 mins on low flame)

4.Once the mixture turns dry, add the egg and scramble well with the chicken. garnish with chopped coriander leaves and turn the heat off. Keep aside to cool the mixture.

5.Divide the maida dough into 8 equal portions(keep them covered all the time, taking one at a time to roll).Use maida for dusting and while rolling out either in a round shape or square, whichever is convenient for you.

6.Spoon a little stuffing in the center and start folding it to make a ball. Roll the stuffed ball using maida to dust it now and then.

7.Heat the flat iron griddle (thava), place the paratha on it, grease it with oil on both the sides and roast it until turns golden with brown spots.

8.Top it with dollop of butter and serve it hot with either pickle, chutney, gravy or just plain yogurt and some raw onions at the side.
