Easy Ridge Gourd Curry

This easy to cook one-pot dish is so simple to prepare, yet adds up to good health and great taste!


Vegetable oil 2 Tablespoon
Cumin seeds 1 Teaspoon
Fenugreek seeds 1/4 Teaspoon
Dry red chilies 2 Medium
Garlic cloves 5 Medium , chopped finely
Green chilies 1 Medium , chopped finely
Ridge gourd 3 Medium , chopped
Water 2 Tablespoon (or more as needed for the gravy)
Curry leaves 5 Medium , torn



1. Heat oil in a pan. When the oil is hot, add cumin seeds and fenugreek seeds.

2. After about 30 seconds, add dry red chilies, garlic cloves and green chilies. Saute for a minute.

3. Add the ridge gourd and stir fry for a minute.

4. Add a little water, cover and cook for 10 minutes until the vegetable turns soft and tender.

5. Finally when cooked garnish with some curry leaves.


6. Serve with roti or chapati or as a side dish with rice.
