Ingredients

Taro root 250 Gram
Onion 1 Small , chopped
Garlic clove 4
Curry leaves 1 Teaspoon
Mustard seeds 1/2 Teaspoon
Cumin seeds 1/2 Teaspoon
Fenugreek seeds 1/2 Teaspoon
Tamarind juice 3 Cup (48 tbs)
Jaggery 1/2 Teaspoon
Chili powder 1 Teaspoon
Tumeric powder 1/2 Teaspoon
Oil 2 Tablespoon
Tomato 2 Medium , chop
Salt To Taste

Directions

GETTING READY:

1.Boil the taro root and peel it and set aside.

2.Cut the taro root into 2 halves.

MAKING:

3.Heat oil in a pan and add mustard seeds, cumin seeds and fenugreek and allow it to splutter.

4.Add onions, curry leaves and sauté until it turn dark brown.

5.Add the taro pieces, chili powder, turmeric powder and salt and stir fry.

6.Add the tamarind juice and bring it to a boil.

7.As it comes to a boil, lower the flame and add the tomatoes, jaggery and simmer it for 5-10 minutes.

SERVING:

8.Serve it hot with roti, phulka or rice.
