Spicy Mint Rice

Spicy Mint Rice is an effortless and comforting one pot meal for the entire family, especially for light lunch or dinner. This recipe can be made using the conventional method that is used to make any pulav without using a microwave. The flavor is equally blissful and a wonderful quick meal as well.


Basmati rice 1 Cup (16 tbs) , thoroughly rinsed
Ghee 1 Tablespoon
Bay leaf 1
Water 2 Cup (32 tbs)
Green chili pepper 1 , finely chopped (or more to taste)
Fresh mint leaves 1/2 Bunch (50 gm) , stemmed, washed and chopped
Potato 1 , peeled and diced
Salt 1 Teaspoon
Biriyani masala 1 Teaspoon
Fresh mint sprigs 4 (for garnish)
Cumin seed 1/4 Teaspoon



1) In a microwave heat a serve bowl with lid, melt ghee over a low heat.

2) Add the cumin seeds, bay leaf and green chili for tempering.

3) Stir in the potatoes and mint leaves, then sprinkle with salt and cover for a few seconds.

4) Add the masala and rice, gently stir until all the ingredients are thoroughly mixed.

5) Pour in water, mix and cover the pan with the lid.

6) Cook in the microwave on High for 13 minutes. Gently stir at an interval of 4 to 5 minutes until done.


7) Serve the Spicy Mint Rice immediately with yogurt, roasted papad, lime pickle and fresh salad.
