Healthy Indian Spaghetti In Yellow Curry Sauce

A low fat and packed with nutrients version of my favorite spaghetti and chicken dish!

Ingredients

Granulated garlic 2 Tablespoon
Tomatoes 2 Medium , roughly chopped
Onion 1 Large , roughly chopped
Tamarind paste 1 Teaspoon
Chicken breast 250 Gram , diced
Button mushrooms 1 Cup (16 tbs) , finely chopped
Spaghetti 2 Cup (32 tbs) , cooked, drained
Curry powder 1 Teaspoon
Coriander seed powder 2 Teaspoon
Salad seasoning 1 Teaspoon
Red chili powder 1 1/2 Teaspoon
Onion powder 1 Teaspoon
Water 1/2 Cup (8 tbs)
Salt To Taste
Oil 2 Tablespoon
Corriander leaves 4 Tablespoon , chopped finely

Directions

GETTING READY:

1)Cook the spaghetti in salted water and drain well, set this aside.

2)Roughly chop the onions and tomatoes and set aside, Dice the chicken.

3)In a blender combine onions, tomatoes and tamarind paste and blend until smooth.

MAKING:

4)Heat oil in a sauce pan and add the add the diced chicken cubes. Slowly cook the chicken with the granulated garlic powder with the lid on for 5 minutes or till chicken is cooked half way.

5)Add the blended tomato puree and stir well.

6)Add the chili powder, coriander seeds powder, curry powder, salad seasoning and onion powder to the sauce pan and stir well. Add the mushrooms and let it simmer for about 2 minutes with the lid on, add water if the tomato sauce gets too dry.

7)Make sure the chicken is cooked and seasonings are as per your taste before adding the spaghetti. Let the spaghetti mix with the sauce and its flavors for some more time before serving.

SERVING:

8)Serve on a plate with some chopped coriander leaves on top for added crunch and enjoy!

NOTE:

This dish is made with only 2 tbsp of oil which makes it ideal for all those people who are watching their weight.
