Gajar Muli Paratha - Stuffed Carrot Radish Bread

Make this healthy paratha at home.

Ingredients

For dough
Wheat flour/Multigrain flour 1 1/2 Cup (24 tbs)
Salt 1 Teaspoon
Ghee, butter/Oil 2 Tablespoon
Water 1/2 Cup (8 tbs) ((For kneading the dough))
For stuffing
Radish 1 Medium , peel, wash and grate
Carrot 1 Medium , peel, wash and grate
Red onion 1/3 Tablespoon , chopped
Coriander leaves 1/4 Cup (4 tbs) , chopped finely
Ginger To Taste , minced
Garlic To Taste , minced
Green chili To Taste , minced
Carom seeds 1 Teaspoon
Dhania jeera powder
Turmeric powder 1 Pinch
Garam masala To Taste
Salt To Taste
Amchur/Lemon juice 1 Teaspoon
Sugar To Taste (Optional)
For frying
Oil 2 Tablespoon ((or more as needed))

Directions

GETTING READY

1. Take a bowl and add the wheat or multigrain flour and salt and combine well. Add a mix of ghee and oil or either one of the two. Combine well to get a crumbly mixture of the dough.

2. Squeeze out the water from the grated radish. Use a little of the water squeezed from the grated radish and some ordinary water and knead the dough. Smear a little oil on the dough once kneaded. Keep it aside in a closed container for about 15 - 20 minutes.

3. Into the bowl add the mixture of grated carrot and radish (approx. 1 1/2 cups), red onions, chopped coriander leaves, ginger garlic and green chili paste, carom seeds, a mix of coriander and cumin powder, turmeric powder, garam masala, salt, amchur powder and sugar to taste. Combine well.

MAKING

4. Roll the prepared mix into lemon sized balls. Take small portions from the kneaded dough and roll into slightly larger than lemon sized balls. Flatten each ball and place the ball of the radish and carrot mixture in the middle and close it around it and roll into a flat round paratha or into a square shaped paratha.

5. In a skillet heated to a medium heat, fry the parathas drizzling with a little oil. Cook completely till both sides are done.

SERVING

6. Serve the hot gajar muli parathas with any raitha of your choice and a slice of butter over the paratha.
