Sambar (generic)

Pigeon pea 1 Cup (16 tbs)
Water 3 Cup (48 tbs) , divided (1 cup hot water for boiling the dal + 2 cups cold water for simmering the dal and vegetables)
Regular salt 2 Teaspoon , divided (1 teaspoon for for boiling the dal + 1 teaspoon for simmering the dal and vegetables)
Sambar powder 4 Teaspoon , divided (2 teaspoon for for boiling the dal + 2 teaspoon for simmering the dal and vegetables)
Chayote 1/2 Medium , chopped (or chow chow)
Moringa 1 Ounce , skinned and cut into 4 pieces (or drumsticks)
Turmeric powder 1 Teaspoon
Brussel sprouts 5 Small , chopped
Radish 1 Medium , chopped
Tomato 1 Large , crushed
Tamarind paste 1 Teaspoon
Green chilies 2 Medium , chopped
Oil 1 Teaspoon
Butter 1 1/2 Teaspoon
Black lentil 1 Teaspoon
Mustard seeds 1 Teaspoon
Cumin 1 Teaspoon
Green bell pepper 1 Teaspoon
Garlic 4 Clove (20 gm) , chopped
Dried red chili 1 Medium , crushed
Green chili pepper 1 Medium , split vertically
Onion 1 Medium , roughly chopped
Curry leaves 6 Gram
Hing 1 Pinch
Eggplant 2 Small , chopped



1. On a chopping board cut all the vegetables into bite sized pieces and keep aside.


1. In a pan add urad dal, pour in hot water, salt, turmeric powder and let it simmer for 12 minutes on a medium high heat.

2. Partially cook the lentils for 10 -12 minutes then add the vegetables with water and let it simmer for 15 minutes.

4. For a slight watery texture of the sambar, add 2 tablespoon water and let it cook for 5 minutes.

5. In a pan, heat oil, add butter, mustard seeds, cumin seeds, black pepper, garlic, dry red chili, green chilies, onion, curry leaves, hing, sambar powder, turmeric powder, tamarind and stir fry all the dry ingredients on medium high heat for few minutes.

6. Transfer all the contents of dal when the onion trurns light brown, stir well on medium high flame for 1 minute. Switch off gas and let it rest for 5 minutes.


7. Serve the sambar alongside dosa, idli or with rice.
