Sugar 3 Cup (48 tbs)
Light corn syrup 1 Tablespoon
Salt 1/2 Teaspoon
Milk 1 Cup (16 tbs)
Orange peel 1 Teaspoon
Cinnamon 1/2 Teaspoon
Nutmeg 1/4 Teaspoon
Allspice 1/8 Teaspoon
Dates 8 Ounce , cut into pieces (1 Package)
Butter 2 Tablespoon
Pure vanilla extract 1 Teaspoon
Pecans/Walnuts 1 Cup (16 tbs) , chopped



1. In a pan cook combining sugar, corn syrup, salt and milk over low heat, stirring until sugar dissolves.

2. Wash down sides of pan to prevent crystals forming and continue cooking to 236° on candy thermometer (soft ball stage).

3. Add orange peel, spices and dates and continue cooking to 238°.

4. Remove from heat and add butter without stirring.

5. Let it cool to 110° or lukewarm.

6. Beat adding vanilla until mixture just begins to thicken.

7. Continue beating adding nuts until it begins to hold its shape.

8. Turn out onto damp cheesecloth and shape into a roll 2 inches in diameter.


9. Set aside to turn firm, then cut into thin slices as needed and serve.
